Postdoctoral application: which research interests to list?

I am in the process of looking for a postdoctoral position, whether in my own field (numerical astrophysics) or in a new one, which perhaps will still require the skills that I have acquired, albeit on a completely different topic (geology, atmospheric science, etc.). My question is: if I apply for a post on a different field, should I include my original research interests in the application, or should I first become familiar with the problem in the new field and then express my interests in this new problem?
